1/2 cup Powdered Sugar
2 Eggs
1 teaspoon Vanilla Extract
1/2 teaspoon Almond Extract optional
3 cups Flour
1 teaspoon Xantham Gum
1 teaspoon Baking Powder
0.5 teaspoon Salt

In a mixing dish, cream butter and sugar for two minutes. Blend in the eggs one at a time until fully combined. Mix in the vanilla extract until thoroughly combined.

In a separate bowl, combine the dry ingredients. Mix the dry ingredients into the wet ingredients a cup at a time until everything is well blended.

Depending on the intensity desired, add 1-3 drops of food coloring. Mix until a dough forms and the color is evenly distributed. Take the dough out of the bowl and divide it into two equal parts.

Knead each dough ball until it is smooth and the colors are uniformly spread. Roll out the dough on a floured surface. Roll out to a thickness of 1/4 to 1/3 inch and cut out shapes with a greased cookie cutter.

Cool the shapes for 10-15 minutes on baking sheets lined with parchment paper. Bake for 6-9 minutes at 350°F, depending on size and thickness.

Allow for a 3-5 minute cooling period on the cookie sheet to finish cooking and firm up the cookies. Place cookies on a cooling rack if desired. Using a mesh sieve, sprinkle powdered sugar over the cookies once they have totally cooled.
