1 cup Kosher Salt
1/2 cup Brown Sugar
1 tablespoon Black Pepper
1.5 teaspoons Allspice Berries
1.5 teaspoons Candied Ginger chopped
1 gallon Water

In a large stockpot, combine the broth, salt, sugar, peppercorns, allspice, and ginger. Over medium-high heat, bring to a boil. Stir the sugar and salt together until they're completely dissolved. Get rid of the heat. Refrigerate the brine after it has cooled to room temperature.

Brine, water, and ice should be combined in a 5-gallon bucket the night before you want to eat. Place the thawed turkey breast-side down in the brine and refrigerate. Turn the bird once halfway through brining.

On the roasting day, preheat the oven to 500 degrees Fahrenheit. Take the bird out of the brine and give it a cold water inside-out rinse.

Rub the bird with vegetable oil. Roast the bird on the lowest rack of the oven for 30 minutes.

After 30 minutes, decrease the oven temperature to 350 degrees F, insert a probe thermometer into the thickest part of the breast and cook until the temperature reaches 155 degrees F. Use the breastplate at any point during cooking should the bird become too brown.
