8 ounces Pasta Gluten-free pasta
1 cup Tofu firm
1 cup Basil Leaves
3 cloves Garlic minced
3 tablespoon Parmesan Cheese
2 tablespoon Walnut chopped
2 tablespoon Olive Oil
2 tablespoon Lemon Juice
Salt

Boil pasta, blend the sauce, and toss the pasta with the sauce.

Place firm tofu, parmesan, walnuts, garlic, lemon juice, olive oil, salt and pepper into a food processor.

Process on high until smooth.

Cook the pasta in well-salted water until al dente.

Reserve 1 cup of pasta water.

Drain pasta and place back into its pot.

Add as pesto sauce as needed, mixing in a small amount of pasta water at a time.

Serve sprinkle with fresh parsley and extra parmesan.
