Preheat the oven to 400 degrees Fahrenheit. Follow the package guidelines for thawing puff pastry sheets. Cut out individual pastries with a heart-shaped cookie cutter after unfolding the pastry on a lightly floured surface. After brushing the pastry with egg wash, sprinkle sugar crystals over top.

Bake for 15 minutes, or until golden. Remove the dish from the oven and set it aside.

Slice strawberries and add to a bowl with the white sugar. Allow to sit at room temperature for 20-30 minutes to combine and macerate.

Whip cream in a stand mixer or with a hand held mixer. Set aside.

Combine eggs, sugar, Marsala wine, vanilla, and lemon zest in a mixing bowl.

Bring a saucepan half-filled with water to a simmer. Reduce the heat to low and carefully lay the egg mixture in the bowl over the water, ensuring that the bottom of the bowl does not come into contact with the water.

Whisk the mixture continuously for 7 to 10 minutes, or until it has tripled in volume and a custard-like consistency. Remove from heat and set aside after the appropriate consistency is achieved.

To serve, cut heart shapes in half and fill with sabayon custard, strawberries, and whip cream on the bottom half.
