1 large Korean Cucumber
2 Garlic Cloves minced
1 Scallion chopped
1 teaspoon Vinegar
1/2 teaspoon Sugar
1 teaspoon Salt
1 tablespoon Korean Red Chili Pepper gochugaru
1 teaspoon Sesame Seeds
1 teaspoon Sesame Oil

Slice the cucumbers and gently toss them through with 1 tsp of salt and set aside for about 15 minutes.

Place the cucumber in a colander or sieve. Let it sit for at least 30 minutes.

In a large bowl, add the scallion, garlic, vinegar, gochugaru, sesame seeds, sesame oil, sugar and mix well.

Toss cucumbers with dressing until well-coated all over. Serve immediately and enjoy!
