Ingredients

2 cups Long Grain Rice
2 tablespoons Vegetable Oil
1 cup Tomato Sauce
4 cups Chicken Broth
1 Onion chopped
1/2 Red Bell Pepper chopped
2 Garlic Cloves minced
1/2 teaspoon Chili Powder
1/2 teaspoon Ground Cumin
1 teaspoon Dried Oregano
to taste Salt
to taste Black Pepper
2 tablespoons Lemon Juice
for garnish Fresh Parsley
Cuisine:

Cook a pot of rice using chicken broth, tomato sauce, and a few seasonings to make this quick and easy Spanish Rice.

In a medium saucepan over medium heat, heat oil. Add onion, garlic and pepper and cook until softened slightly, 3 to 4 minutes.

Add rice and cook until golden brown.

Stir in chicken broth, tomato sauce, lemon juice, chili powder, oregano, and cumin. Season liberally with salt and pepper.

Increase heat to high and bring to a boil, then reduce heat to low and cover with a lid.

Remove from the heat, fluff up the rice with a fork and add the parsley. Serve!
