125 g Butter

Combine the thyme, paprika, garlic powder, onion powder, cayenne pepper, 1/2 teaspoon pepper and 2 teaspoons salt. 1.5 teaspoons olive oil, rubbed into the pork loin, then evenly sprinkled with the spice mix. Rub the spices into the meat, making sure it is evenly coated. |

Heat a large skillet over high heat, then sear the pork on each side for 1 to 2 minutes. Wipe pan. Melt the butter. Add garlic, cook for 1 minute, or until golden. Mix in the honey, 1/2 teaspoon salt, and 1/2 teaspoon pepper, and cook for 30 seconds. |

Place the pork in the slow cooker. Pour the sauce mixture over the pork and cover with the lid. Cook on LOW for 4 to 5 hours. |

Transfer the pork to a platter and keep warm. Pour the remaining sauce in the slow cooker into a small saucepan and bring to a boil on the stover over medium heat. Cook the sauce for 5 minutes or until reduced by half. |
