1 tablespoon Curry Powder
4 cups Beef Stock
1 cup Frozen Peas
2 tablespoons Cornflour

Curried sausages is a retro recipe, and a flavorful twist on the classic sausage stew. It is perfect as an easy weeknight dinner.Serve it over mashed potatoes or rice for a tasty meal.

Heat up a little olive oil in a frying pan over medium heat. Sautee the sausages for a few minutes until they are browned on all sides. Remove from the pan and allow to cool slightly. Then cut each sausage into 3 or 4 pieces and transfer to your slow cooker.

To the same frying pan, add diced onion and garlic. Sautee for a few minutes until the onion is soft and translucent. Add the curry powder in the pan, saute for another minute until nice and fragrant. Turn off the heat, and transfer this to the slow cooker.

Wash and peel the potatoes and carrots. Cut them into large bite-sized chunks.

Pour the broth or stock into the slow cooker, then add the sausages, onions, and potatoes and carrots. Stir to combine. Cover the crockpot with a lid, and cook for about 4-5 hours on high, or 6-8 on low.

Combine the cornstarch with a little cold water in a small bowl to form a paste, and add this to the slow cooker. Remove the lid of the slow cooker and add the cornflour mixture and frozen peas. Stir through and then continue cooking until the curry has thickened. Serve with mashed potatoes or rice.
