500 g Gnocchi
500 g Cherry Tomatoes
90 ml Olive Oil
250 g Mozzarella Cheese
3 Rosemary Sprigs
1/2 teaspoon Red Pepper Flakes
40 g Basil Leaves
to taste Salt
to taste Black Pepper

    Preheat the oven to 425°F.

    Toss the gnocchi, tomatoes, olive oil, salt, pepper, red pepper flakes, and rosemary in a large mixing basin to coat. Spread the mixture out evenly on a rimmed baking sheet.

    Bake for about 25 minutes, or until the gnocchi is light brown and the tomatoes are beginning to burst.

    Remove and discard the rosemary sprigs. Cool for 5 minutes in a serving basin.

    Add the mozzarella and basil and toss to combine.
