Ingredients

1 pound Italian Sausage
1/4 cup Olive Oil
2 Red Bell Pepper sliced
2 Yellow Onion sliced
1 teaspoon Kosher Salt
1 teaspoon Black Pepper freshly ground
1/2 teaspoon Dried Oregano
1/2 cup Basil Leaves chopped
4 Garlic Cloves chopped
2 tablespoons Tomato Paste
1 cup Marsala wine
1 can Tomatoes diced
Cuisine:

Italian sausages cooked with bell peppers, sweet onions, crushed tomatoes, and garlic. Served on a hoagie roll or over pasta or polenta.

Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.

Keeping the pan over medium heat, add the peppers, onions, saltand pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.

Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes. Return the sausage back to the pan and cook until sausage is done, covering for a couple of minutes. Serve over polenta, penne pasta, or load it up on a hoagie roll.
