Preheat oven to 400°F.

In a large bowl, toss the potato with 1 tablespoon of olive oil. Season with salt, pepper.

Place in a single layer on a large baking sheet. Bake until lightly browned and tender.

Cut each potato in half lengthwise then using a small spoon scoop out the potato flesh from the center.

Brush the remaining tablespoon of olive oil all over each potato half then season the insides with salt and black pepper.

Cook the bacon over medium heat until it is crispy. Remove it from the pan and crumble it when it's cool enough to touch.

Mix scooped potato filling, cheddar cheese, sour cream, butter, salt, and pepper.

Divide the filling among the crisped potato skins. Top each potato round with bacon. Broil until melty, about 2 minutes. Garnish with green onions.
