Begin brining your turkey two days before you intend to cook it.

Combine the salt and sugar in a small bowl. Rub salt mixture all over bird.

Cover and refrigerate for 1 day.

The day before planning to roast, uncover turkey and drain any liquid in the bottom of the pan.

Remove the turkey from the fridge an hour before you plan to roast it and blot it dry with paper towels.

Allow to sit for 1 hour at room temperature.

Preheat the oven to 350 degrees F.

Melt the butter in a small saucepan.

Add the one lemon and 1 teaspoon of thyme leaves to the butter mixture.

Brush the butter mixture all over the turkey and season with salt and pepper.

Season the inside of the turkey cavity with salt and pepper.

Fill the cavity with the thyme, lemon halves, quartered onion, and garlic cloves.

Tuck the wing tips under the turkey's body and tie the legs together with string.

Roast the turkey about 2 1/2 hours or 3 hours.

Slice the turkey and serve.
