1 tablespoon Fresh Thyme
2 teaspoons Kosher Salt

250 ml Beef Stock
1 tablespoon Flour

Preheat oven to 450°. Combine the oil, garlic, rosemary, thyme, salt, and pepper in a small bowl. Rub all over the roast.

Place roast in roasting pan fitted with a roasting rack. Roast for 15 minutes, then reduce heat to 325° and roast 1 hours 45 minutes more for medium, or 2 hours for medium well done.

Remove the roast from the oven. Add beef stock to the pan to deglaze. Dissolve a tablespoon of cornstarch in a little water and add to the drip pan. Stir quickly while the gravy thickens to avoid lumping.

Thinly slice the roast to serve. Pour the gravy over the slices or serve on the side.
