5 Egg Whites
3 teaspoons Corn Starch
1 teaspoon Apple Cider Vinegar
500 ml Liquid Cream
150 g Sugar
1 teaspoon Vanilla Essence
125 g Raspberries
50 g Blackberries

Pavlova is crisp on the edges, chewy on top, and marshmallow soft and creamy in the centers. This berry pavlova is the ideal dessert to surprise your guests at any special celebration or dinner party.

Preheat the oven to 120°C.

Beat eggs whites until stiff. Add in icing sugar little by little.

Add in cornstarch through a strainer. Keep whipping with the stand mixer on medium. Add in vinegar while whipping.

Spread meringue inside circle on prepared tray. Using palette knife or spatula, shape sides of meringue and level the top.

Bake for about 75 minutes or until dry. Turn the oven off and leave the pavlova for at least an hour before removing from the oven.

Put 500 ml of liquid cream in a bowl and beat it with a stand mixer on medium speed. Place 25 grams of vanilla sugar and 150 grams of sugar in the mixture gradually.

Fill pavlova with cream mixture and decorate with fruit.
