0.5 pound Pancetta diced
1 pound Spaghetti
1 cup Parmesan Cheese grated
3 Eggs at room temperature
1 tablespoon Olive Oil
Salt
Black Pepper
Thyme leaves chopped

Place a large pot of lightly salted water over high heat.

Add pasta to the water and boil until a bit firmer than al dente.

Reserve some of the pasta water.

Heat the olive oil in a large sauté pan over medium heat.

Add the pancetta and cook slowly until crispy.

Put the pancetta into a large bowl.

In a small bowl, beat the eggs and mix in about half of the cheese.

Move the pasta from the pot to the bowl quickly.

Add egg and parmesan mixture to the bowl.

It's the heat of the pasta that will heat the eggs sufficiently to create a creamy sauce.

Add some pasta water back to the pasta to keep it from drying out.

Serve immediately, dressing it with a bit of additional grated parmesan, black pepper, thyme leaves.
