1 tablespoon Vegetable Oil
1/2 Onion
2 Garlic Cloves minced
2 Roma Tomatoes quartered
150 ml Tomato Sauce
1 cups Chicken Broth
to taste Salt
1/4 teaspoon Ground Cumin
1/4 teaspoon Chili Powder
for garnish Cilantro Leaves minced

In a large skillet, heat the olive oil over medium heat. Add the garlic and onion and cook until the onions are translucent. Stir in the rice and toast it for 2 minutes.

Stir in tomato sauce and chicken broth, and bring to a simmer, about 2 minutes. Stir in chili powder and cumin; season with salt and pepper, to taste.

Bring the mixture to a boil, cover, reduce the heat to low and simmer until rice is cooked all the way through, about 15 minutes.
