8 ounces Pasta
2 cups Chicken breasts boneless, skinless, diced into bite-sized pieces
1 cup Cucumber peeled, cubed
1 Red Bell Pepper diced
1/4 Onion minced
1 Carrot shredded
2 Garlic Cloves minced
11 ounce can Mandarin Orange Segments drained
1/3 cup Rice Vinegar
1/4 cup Orange Juice
1/2 cup Vegetable Oil
2 teaspoons Sugar
1 teaspoon Ginger ground
1 teaspoon Garlic Powder
1 teaspoon Onion Powder

To prepare the dressing, combine rice vinegar, orange juice, vegetable oil, sugar, ground ginger, garlic powder, and onion powder in a large mixing bowl and whisk until smooth.

Cook pasta according to package directions, drain.

In a large skillet, combine the olive oil and chicken, season with salt and pepper, and sauté for 15 minutes over medium-high heat, or until the chicken is cooked through.

In a large bowl add the pasta, cucumber, red bell pepper, onion, carrot, garlic and chicken. Toss well with the dressing until well coated.

Refrigerate 1 hour before serving.
