Ingredients

3.5 cups Flour
2 cups Caster Sugar
2 teaspoons Bicarbonate of Soda
2 teaspoons Baking Powder
2 teaspoons Vanilla Essence
185 g Butter melted
600 ml Buttermilk
3 cups Icing Sugar
1 tablespoon Cocoa Powder
2 teaspoons Golden Syrup
Boiling Water
to decorate Unsweetened cocoa powder

Lamingtons are little sponge cakes coated in chocolate and grated coconut. They’re soft, buttery and delicious, with a rich hit of chocolate flavour.

Preheat oven to 180C/350F.

Sift flour with the dry ingredients into a bowl.

Beat butter, buttermilk and 1 teaspoon vanilla with an electric mixer on medium high speed until light and fluffy. Add flour mixture and mix again until you have a smooth cake batter.

Pour the batter into the prepared pan and bake for 25 minutes until a skewer inserted into the centre comes out clean.

Cut cake into 10 rectangles. Freeze for 1 to 1.5 hours.

Mix icing ingredients together then add enough boiling water to make a runny consistency.

One at a time, dip the squares of cake into the chocolate frosting and then roll the cakes in the coconut. Gently transfer the Lamingtons to a clean wire rack to set.
