This is comfort food at its best, healthy and delicious. Koreans eat short grain rice not long grain rice. It is much stickier, fluffier, more moist and tastes more savory sweet than long grain rice.

Rinse the rice in cold water. Then pour out the residual water. Rinse and pour-out the water 4-5 times or until the residual water becomes clear.

Add 2 cups of water to the pot and soak for 30 minutes with the lid closed.
Bring it to boil over high heat; as soon as it starts boil, stir with a spoon. Put lid back on, reduce heat to medium low and simmer for 10 to 12 minutes.

Remove from heat and let it rest for 10 minutes. Don’t open lid right now, so rice will observe steam and finish cooking.
