2 Bay Leaves

Melt the butter in a large soup pot and add bay leaves and sauté for a few seconds. Add chopped onions and garlic. Stir and sauté until onions soften for about 3 to 4 minutes.

Add in the tomatoes, vegetable broth and salt. Bring to a boil and turn down to low simmer. Cook for 20 minutes.

When the tomatoes are cooked, remove the pot from heat, then remove the bay leaves and blend into a smooth soup with a stick blender.
