500g Fish Filets
2 cups Breadcrumbs wholemeal
1/4 cup Parmesan Cheese grated
2 teaspoon Lemon Zest grated
1 clove Garlic
1 Egg
2 tablespoon Milk
2 tablespoon Olive Oil
1/4 cup Flour wholemeal plain

Preheat oven to 200°C/180°C fan-forced.

Place breadcrumbs, parmesan, lemon rind and seasoning in a food processor.

Spread the breadcrumbs on a tray, spray with oil, then bake for 15-20 minutes.

Slice the fillets lengthways into fingers.

Place breadcrumbs on a plate.

Whisk egg, milk and garlic together in a plate.

Place flour on a plate.

Coat 1 piece of fish in flour.

Dip in egg mixture.

Coat in breadcrumb mixture.

Place on baking tray.

Spray both sides of fish lightly with oil spray.

Bake for 10 minutes.

Serve immediately with salad.
