1 clove Garlic minced
2 teaspoons Shallot minced
1/2 cup Olive Oil
1/4 cup Balsamic Vinegar
1 tablespoon Dijon Mustard
1 tablespoon Lemon Juice
1 teaspoon Sugar
1/2 teaspoon Salt
1/4 teaspoon Black Pepper ground
2 heads Romaine Lettuce
1 cup Tomatoes diced
1 cup Kalamata Olive chopped
1 cup Cucumber chopped
1 Avocado
1 cup Feta Cheese

Take a large bowl and mix olive oil, shallots, garlic, balsamic vinegar, dijon mustard, lemon juice, sugar, black pepper and salt.

Reserve the half of the mixture for the dressing.

Add the chicken breasts to the other half of the mixture.

Store in the refrigerator for at least 30 minutes or up to 2 hours.

Place the chicken pieces in a preheated griller and grill for 5-6 minutes until the pieces turn tender and brown in colour.

In a large salad bowl, add first the lettuce, and then top it with tomatoes, cucumber, kalamata olive, avocado and feta cheese.

Add the sliced breast chicken and drizzle the dressing over the entire salad and serve immediately.
