4 Chicken breasts
3 tablespoons Olive Oil
1 tablespoon Lemon Juice
1 tablespoon Dill
1 tablespoon Parsley
2 Garlic Cloves minced
1 Zucchini sliced
2 Tomatoes sliced
1/2 Red onion sliced
2 Lemons sliced
1 cup Feta Cheese shredded
1 cup Mozzarella Cheese shredded
to taste Salt
to taste Black Pepper

Chicken breasts are slit and brushed with a mixture of olive oil lemon, garlic, dill and parsley and then stuffed with zucchini, roasted red pepper, feta and onions. You’ll only need about 10 minutes prep time.

Preheat the oven to 400 ºF.

Place chicken on prepared sheet pan. Make 5-6 slits in the back of the chicken with a sharp knife, being careful not to cut all the way through.

Whisk together the olive oil, lemon juice, dill, parsley, and garlic in a small bowl. Drizzle olive oil mixture over chicken breasts, ensuring sure it gets through the slits. Add salt and pepper to taste.

Fill the 4 chicken breasts with zucchini, tomato, red onion, and lemon slices.

Sprinkle 1 cup of crumbled feta and 1 cup of shredded mozzarella, evenly, over the 4 chicken breasts.

Bake in the preheated oven for about 25 minutes until the chicken is cooked through and the center is no longer pink.

Garnish with sprinkles of dill and parsley and serve warm!
