4 Mahi Mahi Fillets 4-6 ounce
4 tablespoons Unsalted Butter
to taste Lemon Pepper
2 tablespoons Lemon Juice
1 Lemon sliced
4 Garlic Cloves minced
1 tablespoon Olive Oil
1 tablespoon Fresh Parsley chopped
for garnish Chives

Rinse the mahi-mahi fillets with cold water, and pat dry with paper towels. Season the mahi-mahi fillets with salt and black pepper on both sides.

In a large skillet, heat the olive oil over medium-high heat. When the olive oil is hot, carefully place each fillet in it. Cook them for 5 minutes on each side. Flip the fillets over gently and cook them until both sides are golden brown. Remove from heat and transfer fillets to a serving plate.

Heat the butter, lemon juice, and lemon slices in the same skillet over medium heat. Heat until the butter is melted and the liquid is just beginning to boil. Reduce the heat to low and add and saute the garlic for 1 minute. Stir in the fresh minced parsley.

Taste the sauce and season with more salt and pepper and needed. Pour over the mahi mahi and garnish with fresh chives, serve immediately.
