Use electric beaters to beat the butter and sugar in a bowl until pale and creamy. Add the eggs, one at a time, beating well and scraping down the sides of the bowl after each addition. Beat in the vanilla and rum. Add flour mixture and stir with a wooden spoon or rubber spatula until evenly incorporated. Add in chopped apples and fold gently. |
