3/4 cup Hot Water
1/2 teaspoon Sugar
2 Eggs
1/3 cup Sugar
1.5 teaspoon Salt
6 tablespoons Unsalted Butter
1 cup Mashed Potatoes
4.5 cups Flour
2.5 tablespoons Fresh Rosemary chopped

Gently whisk the water, yeast, and 1/2 teaspoon sugar in the bowl of a stand mixer. Wait for five minutes.

Add the remaining sugar, mashed potatoes, butter, eggs, rosemary, and salt to the bowl with the yeast mixture and stir with a spatula until smooth. Add 4 1/2 cups of the flour and mix until you form a shaggy dough.

Divide dough into 15 equal pieces. Roll each into a ball and place into a 9×13-inch pan that's been sprayed with nonstick cooking spray. Cover and let rise until doubled, about 30 minutes to 1 hour.

Preheat the oven to 375°F. Brush tops of dough with melted butter. Bake for 20-28 minutes, or until rolls are golden.
