1 pound Ground Beef
1 package Taco Seasoning
1/2 cup Water
10 ounce Red Enchilada Sauce
15 ounce Pinto Beans drained
15 ounce Corn drained
6 Tortillas sliced into 1-inch strips
1 cup Colby-Jack Cheese

This Beef Burrito Skillet has beef, black beans, salsa, and tortillas all cooked in one skillet. The tortillas turn soft and almost like a dumpling.

In a large skillet over medium-high heat, cook ground beef breaking up the meat with a spoon. Cook until the beef is no longer pink. Drain.

Add the taco seasoning, water, enchilada sauce, corn and beans to the beef in the skillet. Cook 5 minutes or until sauce thickens slightly.

Stir in tortilla strips; cook 1 minute. Top with cheese; cover, and remove skillet from heat. Let stand until cheese is melted.
