Heat the oil in a small saucepan over low heat and add the onion. Fry gently for 10-15 minutes. Remove the pan from the heat and stir in the onion marmalade. |

Cook the duck confit according to the package directions, then cut the bone and shred the meat into thick shreds. |

Cut the buns in half and spread a little butter on the cut sides. Place butter-side down on a griddle pan over high heat for about 1 minute. |

Spread mustard on one half and onion marmalade on the other. Fill the buns with the shredded duck and some rocket. Serve right away. |
