4 Turnips peeled
1 Potato peeled
1 tablespoon Olive Oil
1 Onion diced
4 Garlic Cloves chopped
1 Granny Smith Apple peeled
1/3 cup Cream
to taste Kosher Salt
to taste Black Pepper
1 teaspoon Thyme leaves chopped
4 cups Chicken Broth

In this recipe, the humble turnip is transformed into a rich turnip soup made creamy with just 1 tablespoon of butter. Serve it as a starter or side soup. The bacon slice on top is optional.

Melt the butter and olive oil in a large pot. Add the onions and cook until tender and just beginning to brown.

Add the garlic, thyme, salt, and pepper. Stir together and cook for 2-3 minutes until the garlic is very fragrant.

Add the turnips, potatoes, apple and broth. Bring to a simmer and reduce heat to simmer. Cover and cook for 25-30 minutes until the potatoes and turnips are tender.

Puree the soup in the pan using an immersion blender or transfer to a regular blender and blend until smooth.

Stir in cream and heat through for 2-3 minutes.

Just before serving, cook bacon in a non-stick skillet over medium until crisp, 6 to 8 minutes. Serve soup topped with crumbled bacon
