1/4 cup Sour Cream

1/4 cup Parmesan Cheeseshredded

Peel and cut potatoes into quarters lengthwise. Place potatoes in a large pot and cover with cold, salted water by an inch. Bring to a boil, reduce heat down to medium-low and allow to simmer until fork tender. Drain. |

Add the softened butter and mash the potatoes until smooth and lump free. Add in sour cream and continue mashing until the potatoes are smooth and fluffy. Add in the milk, stir then add in the remaining milk as needed. |

Add in the parmesan cheese. Season with salt and pepper to taste. Serve with parsley. |
