2 Carrots peeled, cubed
1 Onion chopped
2 Garlic Cloves minced
3 cups Vegetable Broth
to taste Salt
to taste Black Pepper
1 teaspoon Dried Thyme
for garnish Green Onions chopped
1/4 cup Cream

In this recipe, the humble turnip is transformed into a rich turnip soup made creamy with just 1 tablespoon of butter. Serve it as a starter or side soup.

Heat oil in a pot and saute the onions, and carrot for a few minutes.
Add garlic and saute for one more minute.

Add vegetable broth with turnips and carrots. Add seasonings.
Cook until all vegetables are tender.

Puree the soup in the pan using an immersion blender or transfer to a regular blender and blend until smooth. Stir in cream and heat through for 2-3 minutes.

Transfer to serving bowls and garnish with chopped green onions
