2 cups Chicken Broth
1/2 cup Heavy Cream
1/2 tablespoon Lemon Juice

Cut asparagus into 1-inch pieces and set aside; reserve a few tips for garnish.

Heat the olive oil in a saucepan over a medium heat. Add the shallots, asparagus stalks and garlic, and cook for 5-10 mins until softened but still bright.

Add the stock and bring to the boil. Season, to taste, with salt and freshly ground black pepper and reduce the heat to simmer for 5-7 minutes, until the asparagus is cooked through.

Add the cream and blend with a hand blender until smooth.
