1 lb. Ground Beef
1/2 Onion chopped
2 Garlic Cloves minced
2 cup Frozen Corn defrosted
14 ounce can Diced Tomatoes
1.5 cups Cheddar Cheese
32 oz Frozen Tater Tots
1/2 teaspoon Chili Powder
1/2 teaspoon Cumin
Salt
Ground Pepper
1/3 cup Sour Cream
1 tablespoon Fresh Parsley for garnish
2 tablespoons Vegetable Oil

Cowboy Casserole is an easy weeknight family dinner with ground beef, corn, cheddar cheese and sour cream topped with crispy tater tots.

Preheat oven to 375 degrees.

In a large skillet over medium heat, heat oil. Add beef and onion over medium heat until beef is no longer pink. Add, garlic, chili powder and cumin.

Add the corn, tomatoes, 1 cup cheese, sour cream, garlic, chili powder and cumin.

Cook, stirring regularly, until cheese is melted and sour cream is incorporated.

Pour beef mixture into a 9 x 13 inch baking pan. Top with frozen tater tots and then sprinkle remaining cheese on top.

Bake uncovered for 25-30 minutes or until cheese is bubbly and tater tots are thoroughly cooked. Garnish with parsley and serve
