1 tablespoon Olive Oil
1 Garlic Clove minced
1/2 teaspoon Salt
1.5 cup Water
1 tablespoon Lime Juice
1 teaspoon Lime zest
1/2 cup Cilantro Leaves finely chopped

Cilantro lime rice is easy to make and a great side side for Mexican, Tex-Mex, Asian and Indian cuisine. It’s vegan, gluten free, low fat and oil free recipe. Cook your rice with the stovetop, rice cooker or instant pot!

Add the dry rice to a fine mesh sieve, and rinse with cool running water until the water coming from the rice is no longer white and cloudy.

Add the rice to a a medium non-stick saucepan, with a tight fitting lid. Add 1.5 cups water to the rice, along with the vegetable oil,garlic and salt.

Bring to a boil over high heat, cover with lid, and reduce the heat to low.

Simmer for 20-25 minutes until the rice is soft and fluffy.

Uncover the pot, fluff the rice with a fork, add the lime zest, juice and cilantro. Stir to combine and adjust salt to taste.
