4.5 cups Confectioners’ sugar
1 cup Sugar
2 Eggs
1 teaspoon Vanilla Extract
1/2 teaspoon Cinnamon
1/4 teaspoon Salt
2.5 tablespoons Meringue Powder
1/4 cup Water

Heat oven to 350ºF.

Whisk together flour, cocoa, salt and cinnamon; set aside.

Beat the butter, 2.5 cups confectioners’ sugar and white sugar in a large bowl with a mixer on medium-high speed until light and fluffy. Beat in the egg and vanilla until creamy, 1 to 2 minutes. Gradually add the flour mixture and beat until combined, about 2 minutes.

Divide the dough in half; pat each piece into a disk and wrap in plastic wrap. Refrigerate until firm, 1 hour.

On a floured surface roll dough to ¼ inch thick. Cut with a 5-inch gingerbread man cookie cutter and transfer to unlined baking sheets. Reroll scraps once. Bake until cookies spring back when touched, about 12 min. Cool on wire racks.

Beat the 2 cups confectioners' sugar, meringue powder and water in a bowl with a mixer on high speed until smooth and thick.

Use a piping bag with a very thin nozzle to pipe skeleton outlines on the biscuits.
