4 Carrots sliced
1 Onion diced
3 Potatoes sliced
1 Leek diced
2 Green Pepper diced
1 cup Dry White Wine
Olive Oil
Salt
Black Pepper
1/4 cup Parsley chopped

Over high heat, cook chicken in a dutch oven until brown on all sides.

Transfer the chicken out of the dutch oven to a plate.

Add oil to the dutch oven over medium heat.

Season with salt and pepper and add the carrots and leek.

Cook until vegetables are tender.

Then add chicken and white wine. Bring mixture to a simmer and cook until the chicken is no longer pink.

Add broth until cover the chicken an cook for 25 minutes.

Add potatoes and cook until potatoes are tender about 20 minutes.

Serve with parsley.
