2 Chicken breasts
6 cups Lettuce
1 cup Cherry Tomatoes chopped
1 cup Cucumber chopped
1/2 Red onion thinly sliced
1/2 Red Bell Pepper thinly sliced
1 Avocado sliced
1 Mango diced
4 tablespoons Coriander Leaves fresh
1 small Red Chili chopped
7 tablespoons Olive Oil
5 tablespoons Lemon Juice
1/2 teaspoon Salt
1/2 teaspoon Black Pepper
1 teaspoon Garlic crushed

Mix 2 tablespoons olive oil, 2 tablespoons lemon juice, 1 teaspoon garlic, ¼ teaspoon salt, ¼ teaspoon black pepper in a bowl.

Place the chicken breasts in the bowl and coat evenly in the marinade.

Cover and leave at least 30 min.

In a cast iron pan over high heat, melt 1 tablespoon olive oil. Reduce the heat to medium high once the pan is very hot. Cook the chicken breasts for approximately 3 minutes on each side, or until golden brown on the outside.

Remove the chicken from the pan and place it in an oven-safe dish. Drizzle any residual marinade over the chicken.

Cover the dish with foil and bake for 20 minutes, or until the chicken is done.

Combine all dressing ingredients ¼ cup mango, ⅓ cup olive oil, 3 tablespoons lemon juice, ¼ cup coriander leaves, ¼ teaspoon salt, ¼ teaspoon black pepper in a blender, blitz until the liquid is smooth.

Assemble the ingredients for the salad into bowls.
Slice chicken into strips and place the strips on the top of the salad.

Drizzle with the mango salad dressing.
