500 g Penne Pasta
500 g Chicken breasts boneless, skinless
4 tablespoons Butter
2 tablespoons Olive Oil
1 teaspoon Italian Seasoning
2 Garlic Cloves minced
4 tablespoons Flour
1/2 cup Parmesan Cheese grated
1 cup Mozzarella Cheese shredded
to taste Kosher Salt
to taste Black Pepper
1/4 cup Fresh Parsley chopped
3 cup Hot Water

This baked pasta is comfort food at its finest. Filled with chunks of chicken, penne pasta, chopped tomatoes all wrapped up in a creamy cheese sauce. Make this ahead of time and pop in the oven before dinner.

Preheat oven to 350° and butter a large 9"-x-13" baking dish.

Cook pasta according to packet directions.

Heat oil in a big skillet over a medium heat. Add salt, pepper, and Italian seasoning to the chicken's both sides. Add to skillet and cook until chicken is cooked through, 8 minutes per side. Remove chicken and wipe the skillet clean.

Let chicken rest for 5 minutes before slicing crosswise.

Return skillet over medium heat and combine oil and flour. Stir for 2-3 minutes.
Add minced garlic and stir for 30 seconds. Gradually pour hot water, whisking constantly. Stir in Parmesan. Let simmer until sauce thickens, 1 minute, then season with salt and pepper.

Combine spaghetti, chicken, and sauce in a big bowl.
On the bottom of the baking dish, distribute roughly half of the pasta mixture, then top with half of the mozzarella. Add the rest of the spaghetti mixture, then sprinkle extra mozzarella on top. Bake for about 15 minutes, or until cheese is melted.

Garnish with parsley before serving.
