1 Green Bell Pepper sliced
1 Red Bell Pepper sliced
1 Yellow Bell Pepper sliced
2 tablespoons Lime Juice
2 tablespoons Olive Oil
1 Garlic Cloves minced
1/2 teaspoon Salt
1/2 teaspoon Ground Cumin
1/2 teaspoon Chili Powder
1/4 cup Cilantro Leaves chopped
8 Tortillas

In a large shallow bowl, combine lime juice, olive oil, garlic, cumin, salt, chili and cilantro; mix together. Add the chicken thighs and If time allows, let marinate for 30 minutes.

Heat the oil in a large skillet over medium heat. Sear the chicken breasts for about 7-8 minutes on each side. Transfer chicken to a warm plate and let rest.

Add the peppers and onions to the skillet and cook until the onion is soft and the peppers are slightly charred. Season with salt and pepper. Add chicken back to the pan and stir to combine.

Serve over tortillas.
