1 head Cauliflower chopped
2 tablespoons Unsalted Butter
2/3 cup Sour Cream
1/4 cup Heavy Cream
2 Garlic Cloves minced
1.5 cups Cheddar Cheese shredded
6 Bacon Strips chopped
to taste Salt
to taste Black Pepper
1/4 cup Green Onions chopped

Cauliflower Bacon Cheese Casserole is a creamy, cheesy cauliflower with crumbled bacon on top is super easy and ready in 20 minutes.

Preheat the oven to 450 degrees F.

Spray a 2-quart baking dish with non-stick cooking spray.

In a large pot of salted boiling water, blanch cauliflower, 3 minutes. Drain and squeeze cauliflower of water.

Place bacon in a large nonstick skillet over medium heat; cook until crisp, 6 to 8 minutes.

Transfer to a paper-towel-lined plate and let cool.

Whisk together the sour cream and heavy cream, until smooth. Stir in the minced garlic, 1/2 cup of the cheddar cheese, half of the bacon bits, and half of the green onions. If desired, season sauce with sea salt and black pepper.

Add the cauliflower to the bowl and mix with the sauce.

Transfer mixture to the prepared baking dish and top with 1 cup cheddar cheese and the other half of the bacon.

Bake until the cheese melts. Top with remaining green onions.
