6 tablespoons Olive Oil
2 tablespoons Coconut Oil
3 Garlic Cloves smashed
for garnish Fresh Chives chopped
to taste Salt

Bring a large pot of salted water to a boil. Add potatoes to pot, lower heat to medium, and simmer until potatoes are tender, 15 to 20 minutes.

Heat the olive oil in a small saucepan over low heat. Add the whole garlic cloves and simmer for about 3 minutes until fragrant. Discard the garlic.

When the potatoes are done, drain the water and place the steaming hot potatoes into a large bowl. Add the garlic-infused oil, coconut oil, ½ teaspoon kosher salt and plenty of fresh ground pepper.

Mash with a potato masher until the desired texture is reached
