0.5 lb Italian Pork Sausage
1 Onion chopped
1 Garlic Clove minced
2 Celery sliced
1 Carrot cubed
0.5 tablespoon Italian Seasoning
4 cups Chicken Broth
2 cups Kale chopped
1 Bay Leaf

This easy recipe is dairy free, gluten free and almost paleo. Make it with spicy sausage or even substitute turkey sausage if you want.

Heat oil in a large dutch oven over medium-high heat. Add sausage and cook until browned.

Remove the sausage from the oven using a slotted spoon and place in a bowl.

Add the onion, carrots, celery and garlic and cook for 5-6 minutes until softened.

Add the chicken bone broth to the oven.

Reduce the heat to medium low and add the sausage back to the oven along with the bay leaf and simmer for 10-15 minutes.

Add the kale and cook until wilted, about 5-10 minutes.

Remove from heat and season with salt and pepper to taste.
