1 pound Ground Beef

14 Manicotti
1 container Whole-milk Ricotta
3 cups Mozzarella Cheese shredded
1 cup Parmesan Cheese grated
2 tablespoons Italian Parsley Leaves chopped
2 Garlic Cloves minced
3 cups Marinara Sauce
2 tablespoons Butter cut into pieces

Serve baked manicotti shells placed on beef mixture sprinkled with cheese.

Over medium heat, heat a heavy medium skillet. 1 teaspoon olive oil, onion, and ground beef are added to the pan. Salt & pepper to taste. Cook for about 5 minutes, or until the meat is browned and the onion is transparent. Remove from the heat and set aside to cool.

Bring water to a boil in a big pot. Season to taste. Cook for about 6 minutes, or until the manicotti is softened but firm to the biting. Remove the manicotti from the water and set them aside to cool on a baking sheet.

In a mixing dish, combine the ricotta, 1 1/2 to 2 cups mozzarella, 1/2 cup Parmesan, parsley, garlic, salt, and pepper. Stir the beef mixture into the cheese mixture once it has slightly cooled. Transfer the meat and cheese mixture to a large ziplock bag. Cut off the corner.

Preheat the oven to 350 degrees F. Brush a 13 by 9 by 2-inch glass baking dish with the remaining 2 teaspoons of oil. 1 1/2 cups marinara sauce, poured over the bottom of the prepared dish. Fill the manicotti with the cheese-meat mixture.

Arrange the stuffed pasta in a single layer in the prepared dish and spoon the remaining sauce over. Sprinkle the remaining Mozzarella and Parmesan over the top. Dot with the butter pieces. Bake the manicotti, uncovered about 35 minutes.
