Combine the beef, garlic, hot sauce, salt, and pepper to taste in a mixing bowl, being careful not to overmix. |

Cook bacon in a skillet over medium heat until crispy. Drain on a plate lined with paper towels. Maintain the heat in the skillet and test seasoning by frying a pinch of the beef in the bacon fat. Season to taste with salt and pepper, then shape 8 even thin patties about 12 inch thick and set aside. |

In a skillet, cook onions in bacon fat until tender, about 5 minutes. In a mixing bowl, combine the onions, bacon, and cheese. Make a ball out of a spoonful of the bacon/onion/cheese mixture and put it in the middle of four patties. Top with another patty and firmly close the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached. |
