Place eggs in a single layer in a saucepan; add water to depth of 3 inches. Bring to a boil; cover, remove from heat, and let stand 15 minutes.

Cook the bacon over medium heat until it is crispy. Remove it from the pan and crumble it when it's cool enough to touch.

After 14 minutes, remove the eggs from the water and place in the ice water bath.

Peel eggs gently so the whites remain intact and slice in half lengthwise.

Remove the yolks and place in a medium bowl, place the whites on a serving platter.

Add ¾ of the bacon, mayonnaise, cheese, apple cider vinegar, and mustard and mix well with yolks. Season to taste with salt and pepper.

Spoon the yolks back into the egg whites then top with the reserved bacon, some green onions, and a little sprinkle of paprika.
