3 Avocados
12 oz Pasta
1 Garlic Clove sliced
3 oz Spinach Leaves fresh
1 cup Peas
2 cups Cherry Tomatoes
4 tablespoons Lemon Juice
Salt
Black Pepper

    Boil pasta, blend the sauce, and toss the pasta with the sauce.

    Cook pasta according to package instructions.

    About 4 minutes before pasta is done cooking, add frozen peas and corn and cook.

    To cool pasta, rinse it under cold water. Drain thoroughly and place in a big mixing bowl.

    Combine spinach, 2 quartered avocados, 4 Tbsp lemon juice, 1 sliced garlic clove, 1 tsp salt and 1/4 tsp black pepper in a food processor. Blend until creamy and smooth.

    Combine the avocado dressing, sliced tomatoes, and 1 sliced avocado in a pasta bowl.

    Toss the salad until it is uniformly covered.
