Steps

1
Done

Soak your dried chickpeas in a large bowl of water with the baking soda for 18-24 hours.

2
Done

Place the onions and garlic in the bowl of a food processor fitted with a steel blade. Add the parsley, scallions, cilantro, cumin, salt, and red pepper flakes.

Process until blended 30 to 60 seconds, then add the chickpeas and pulse 2 to 3 times until just blended, but not pureed.

Sprinkle in the baking powder. Scrape the sides of the bowl down with a spatula and pulse 2 to 3 times.

3
Done

Transfer the mixture to a container and cover tightly. Refrigerate for at least 1 hour.

Scoop about a golf ball-sized amount and form it into a ball, and then flatten slightly to make a disk shape.

4
Done

Use some nonstick olive oil to spray the air fryer basket. Put as many falafel discs into the basket as you can without them touching each other, then lightly mist them with olive oil. For 8 minutes, air fried the falafel at 350°F. Fry for six more minutes after flipping.

Serve the falafel in warm pita. Serve with tahini sauce and any toppings you like!
